Using softened cream cheese rather than cold cream cheese is important here — it incorporates far more easily and prevents lumps. Similarly, freshly shredding your own cheddar from a block rather than using pre-shredded packaged cheese will produce a noticeably smoother, more flavorful result, as pre-shredded cheese is coated in cellulose that can make soups slightly grainy.
Step 5: Final Cook and Serve
Replace the lid and allow the soup to cook on low for an additional 15 to 20 minutes, stirring occasionally, until everything is fully heated through, completely smooth, and beautifully creamy. Taste the soup and adjust the seasoning as needed — add more salt if it tastes flat, more pepper for heat, or a small squeeze of fresh lemon juice if you want to brighten the overall flavor.
