Homemade Crispy Batter Mix

Ideal for fried chicken, fish, tempura vegetables, or onion rings. Easy to prepare and store in a jar.

Ingredients (for a small jar):
3/4 cup all-purpose flour (about 90 g)
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
To add when mixing:

3/4 cup cold water (about 180 ml)

Instructions:

  1. Prepare the dry mix
    In a jar or bowl, combine all the dry ingredients (flour, cornstarch, baking soda, baking powder, and salt).
    Seal the jar tightly if preparing in advance.
  2. Prepare the batter
    Just before frying, add 3/4 cup of very cold water (or sparkling water for an even lighter, airier batter).
    Whisk quickly until you get a smooth, fluid batter (not too thick, not too runny).
  3. Use
    Dip pieces of chicken, fish, or vegetables into the batter.
    Fry immediately in hot oil at 180°C (350°F) until golden brown and crispy.
