Slow Cooker Amish Pork and Butter Beans
This comforting slow cooker dinner combines tender pork shoulder with creamy butter beans and a rich, savory brown gravy. With just four simple ingredients, it is an easy, hearty meal that requires very little preparation.
Ingredients
– 3 pounds boneless pork shoulder (pork butt), cut into thick 3-inch chunks
– 3 cans (15–16 ounces each) butter beans, drained and rinsed
– 2 cups low-sodium beef broth
– 1 packet (1 ounce) dry onion soup mix
Instructions
1. Prepare the Pork
Pat the pork shoulder pieces dry with paper towels. This helps them maintain their shape while cooking and gives you the option of searing them for extra flavor.
2. Add the Butter Beans
Place the drained and rinsed butter beans in an even layer across the bottom of a 5–7-quart slow cooker.
3. Add the Pork
Arrange the pork shoulder chunks over the butter beans. Nestle the pieces slightly into the beans while keeping most of the meat exposed.
4. Prepare the Gravy Mixture
In a bowl or large measuring cup, whisk together the beef broth and dry onion soup mix.
Continue whisking until the soup mix is mostly dissolved and there are no large clumps.
5. Add the Liquid
Pour the broth mixture evenly over the pork and butter beans.
The pork should be mostly, but not completely, submerged. This allows the meat to slowly braise while creating a rich, flavorful gravy.
6. Slow Cook
Cover the slow cooker with the lid and cook:
LOW: 8–9 hours
HIGH: 4–5 hours
The pork is ready when it is extremely tender and easily pulls apart with a fork. The butter beans should also be creamy and tender.
7. Finish the Dish
Once cooked, skim off any excess fat from the surface if desired.
Gently stir the beans and gravy, turning the pork pieces carefully so they become coated with the savory sauce.
Avoid breaking the pork apart if you want to serve it in large, rustic pieces.
Taste the gravy before adding any salt because the onion soup mix already contains plenty of seasoning.
8. Serve
Place the tender pork chunks among the creamy butter beans and spoon the rich brown gravy over each serving.
