Ingredients

For a large 9-inch fruitcake:

Dried Fruits (about 5 cups total):

  • 1 cup raisins
  • 1 cup sultanas
  • 1 cup chopped dried apricots
  • 1 cup chopped dried pineapple or mixed peel
  • 1/2 cup dried cherries
  • 1/2 cup chopped dates or prunes

Nuts (optional but traditional):

  • 1 cup chopped walnuts or pecans
  • 1/2 cup chopped almonds

Other Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • Pinch of salt
  • 1 cup unsalted butter (room temperature)
  • 1 cup brown sugar
  • 4 large eggs
  • 1/4 cup molasses or golden syrup
  • 1/2 cup orange juice
  • 1 tbsp vanilla extract
  • Zest of 1 lemon and 1 orange
  • 1/4 cup dark rum or brandy (optional, for soaking)
